Our Capocolla is made from a lean muscle of beef, carefully cured in a mixture of salt, sugar, fennel, paprika, cayenne and black pepper for the proper period of time. We then give the Capocolla a second coat of seasoning and hang it to dry to achieve its ideal texture.
